Fruit Salsa Avocado Salad

Healthy Fats, Antioxidants & Fiber

Ingredients: 

1 Avocado

2-3 medium strawberries

1/2 mango (cut into small chunks)

1/4 cup fresh pineapple (diced)

1 Green onion (chopped)

1 stem Cilantro (chopped)

1 lime

Optional: plain greek yogurt

Directions:

Slice, dice and chop all ingredients. 

Cut the avocado in half and remove the pit carefully with a knife. 

Score the avocado halves with a knife and gently loosen avocado chunks with a large spoon (they should easily scoop right out). 

Place chunks from 1/2 of the avocado on a small plate or in a shallow bowl. 

Add half of the pineapple, strawberries, mango, cilantro and green onion to the plate/bowl. 

Squeeze 1/2 of the lime over the fresh avocado fruit salad. 

Add a dollop of plain Greek yogurt on the side if desired.
